What You'll Need
- 1 cup sweet potato purée
- 1/3 cup maple syrup (or your preferred sugar-free sweetener)
- 1/3 cup tahini
- 1 tsp vanilla extract
- 1/4 cup dairy-free milk
- 1/2 cup unsweetened cocoa powder
- 1/2 cup Lean Whey by Genetix Nutrition chocolate flavour works a treat
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup dark chocolate chips
Let's Get Baking
Step 1: Get Set Up
Preheat your oven to 180°C and line a baking tin with baking paper or give it a light grease. No sticking allowed.
Step 2: Build Your Base
Throw the sweet potato purée, maple syrup, tahini, vanilla and dairy-free milk into a large bowl. Whisk it all together until you've got a silky smooth mixture.
Step 3: Add the Good Stuff
Sift in the cocoa powder, baking powder and sea salt, then add your Lean Whey. Fold it all together until a thick, glossy batter comes together. It should look dangerously good at this point.
Step 4: Chocolate on Chocolate
Fold through the dark chocolate chips. Don't skip this part. Pour the batter into your tin and spread it out evenly.
Step 5: Bake and Be Patient
Pop it in the oven for around 30 minutes, until the top is set and firm. The hardest part? Letting them cool completely before you dig in. Trust the process, it's worth it.
